Bell pepper sandwiches are one of my favorite lunch foods. They are quick, easy and super tasty ta’ boot. Here’s how it’s done:
1. Cut a bell pepper in half (after you’ve washed it, of course) and with a pairing knife, slice out the guts. Get rid of that white stuff floating around in the shell. You want two nice cups.
2. Prep your fillins. I like avacado, cherry tomatoes, mustard and sprouts in mine. Get those things cut up nice and small. Then fill the bell pepper cup half way up with those items.
3. Top it off with your favorite deli meat, in Zone proportions of course.
